Anti-crisis sausage made of fish was created in Astrakhan

Researchers of Astrakhan Technical University have developed a method for making raw smoked fish sausage. Moreover, the main raw material for the new product should be fishing illiquid, small fish, from which minced fish will be made. Fish and sausage products will consist of 80 percent of it. It is also planned to use by-products of poultry processing enterprises and spices when producing unusual sausage.

The exact ingredients, their proportions and the recipe for making the product are still kept secret (The most important secret is see at the end of the note – VM). However, already now the fish sausage is called a promising anti-crisis development.

– The use of small fish in the production reduces the cost of the sausage making process, but it does not reduce its nutritional value, – said the head of the Department of Science of Astrakhan Technical University, Doctor of Biological Sciences, Professor Andrey Kotelnikov.

Moreover, according to experts, due to the saturation of easily digestible protein and essential amino acids, such as lysine and tryptophan, fish sausage will be more beneficial to human health than meat and chicken analogues, generously flavored with "chemistry".

– In terms of biological value, such a sausage will be higher than meat, but it will not be inferior to it in taste, – promises the developer of the new technology, head of the innovation and research laboratory "Food Biotechnology and BAS", Doctor of Technical Sciences Professor Marfuga Mukatova. – We have already tried experimental samples of sausage products ourselves and are impressed with the results obtained.

Another advantage of fish sausage is that, having raw materials, it is possible to arrange its production not only at a specialized fish factory, but also at a conventional meat processing enterprise.

As Marfuga Mukatova assured, the technological process assumes that there will be no bones in the fish sausage, but here, of course, a lot depends on the manufacturer, who must comply with this process.

– According to our technology, rib bones will be removed, and only fish fillets will be put into production. As for the small interstitial bones, which are difficult to remove, they, together with the minced meat, will be crushed and ground in a cutter. Thus, as a result, there will be no bones as such in the sausage.

The developer of the new product also told the correspondent of "RG" about how the future Astrakhan fish sausages should look like. These will not be the usual thick loaves, but something like Bavarian "sticks". The appearance of the fish sausage was influenced, by the way, by the personal preferences of Marfuga Mukatova, who admitted that she preferred sausage products of this format.

By the way, fish sausage was already produced in the Soviet years, but it has never been produced under the guise of raw smoked. And the absence of high-temperature heat treatment, according to the developers, is also an undoubted plus.

But still, the main advantage of the new product will be a low price. Apparently, that is why there is already an increased interest in him.

– Potential producers are interested in fish sausage, – says Marfuga Mukatova. – A call has already been received from a Volgograd enterprise expressing readiness to establish production in the very near future.

The prospects for the development of the fish sausage industry are evidenced by the fact that different varieties of fish sausages are already produced and consumed very actively abroad. For example, in Germany they produce fish sausage with the addition of pea protein.

In China and Hong Kong, fish paste has become widespread, from which not only sausage is made, but also balls popular on the local gastronomic market. And in Japan, fish sausage production, which allows rational use of small and low-quality fish, is supported at the state level. In addition, you can find many recipes for homemade fish sausage on the Internet.
