Vegan 3D-Printed Steak That Looks Like a Real One
Israeli company Redefine Meat, based in Rehovot, has introduced Alt-Steak, a vegan food product that reproduces the texture, taste and appearance of a real beef steak – all thanks to 3D printing technology.
Alt-steak is made from soy and pea proteins, coconut fat and sunflower oil, as well as natural dyes and flavors. Designed in such a way that the muscle structure of beef is reproduced in it, artificial steak contains a lot of protein and at the same time – being vegetable – does not contain cholesterol.
Working with leading butchers, chefs, food technologists and taste experts, Redefine Meat has compiled a digital map of more than 70 different sensory factors of meat, including cut texture, juiciness, fat distribution, mouthfeel and more. A significant part of them allegedly managed to be reproduced in the Alt-Steak product.
The company is expected to begin testing these vegan steaks in high–end restaurants in Israel as early as next month - with plans to roll out deliveries to European restaurants next year and to supermarkets in 2022.
Eshchar Ben-Shitrit, CEO and co-founder of the company Redefine Meat, told reporters:
"This is the first 3D-printed steak in the world that can really pass the test that it is really a steak. We have reached an important milestone because we can print these steaks in large quantities, and their taste and texture are amazing."
